Servings: 2 people
Time : 25-30min
Ingredients
- 1 cup ground flax seeds (use a blender to grind or buy grounded from shop)
- 1 cup boiling water
- 2 cups mixed raw seeds, such as pumpkin, sunflower, hemp hearts, etc.
- 2 tbsp of garlic powder
- 2 tbsp dried Italian herb (or dried thyme)
- ½ tsp Himalayan salt
Method
- Place an oven rack in the centre of the oven. Heat the oven to 400°F or 205°C.
- To a medium bowl, add the flax seeds, boiling water, and a pinch of salt. Stir and set aside for three minutes, until the seed mixture goes from a liquid consistency to a gloopy, aloe gel like consistency.
- Add the remaining 2 cups of mixed seeds to the mixture, herbs and stir to combine. Taste and season with a little bit more salt if needed. Cover and let it sit for 10 minutes. Stir up after 10 minutes.
- Lightly grease a half sheet pan with oil. Line with a sheet of parchment paper on the bottom.
- Dollop the seed cracker mixture on the pan and evenly spread using a spatula in a thin half inch thickness. It should be an even layer that covers the surface of the pan smoothly.
- Open the oven door to release some of the heat and reset the temperature to 350°F or 175°C. Rotate the sheet pan, close the oven door and continue baking for 12 -15 minutes, until the seed crackers look golden brown.
- Transfer the crackers to a cooling rack after 10 min to cool completely. Snap the seed cracker bark into smaller pieces and they are ready! Store in an air-tight container for up to 2 weeks for full freshness.
Nutritionist Tip: Incorporating these seeds into your diet can support weight loss and help manage chronic conditions by promoting fullness, reducing inflammation, and providing essential nutrients. Include seeds on top of salads and as a creamy base for your curries or salad dressings.
